Tropical Day

Tropical Day
As we planned out our next fun lunch a few weeks ago we assumed that Dec. 7th would be a cold snowy day in Michigan and that having a tropical theme would "warm it up". But turns out we were wrong. No snow yet but sure was nice to eat sweet tropical dishes.

Pineapple Crockpot Chicken 
                             
 Tropical Shrimp Couscous
Coconut Mango Chicken


Pineapple Crockpot Chicken: Warm and moist chicken slow cooked in the crock pot with Caribbean jerk marinade, bbq sauce, and pineapple. Served with rice cooked in pineapple juice. 

Coconut Mango Chicken: chicken cooked with lime and coconut oil with kale added in placed on top of quinoa all  topped with a tropical mango chutney made with cilantro, mango, and avocado. Recipe

Tropical Shrimp Couscous: A tasty fruity mix of papaya, mango, and pineapple tossed with shrimp, couscous and cilantro.

Breast Cancer Awareness Month: Pink Day

Breast Cancer Awareness Month: Pink Day


Task: create food only using pink ingredients for lunch on Oct. 24, 2012

Angie created a very pink beet hummus served with pitas Instead of using chickpeas for hummus she used beets along with garlic, tahini, lemon. It was so colorful and flavorful!

Tanya created a pink fruit platter with marshmallow fluff dip. Raspberries, strawberries, grapes, and apples spread around a bowl of delicious marshmallow fluff, honey, rum extract, and cream cheese. Perfect for our 78 degree and sunny day outside!

Michelle created a shrimp, bacon, and rice dish served with a ginger and grapefruit spread. Sauteed shrimp with shallots, ginger, coconut oil and apple cider on top of coconut, ginger, and grapefruit flavored pink rice with bacon added. And a dipping sauce of Greek yogurt, grapefruit, honey, and ginger for a zany addition. Odd combinations but they seemed to work together!

Color Day 2: All Food Green

Task: create food only using green ingredients for lunch on Oct. 12, 2012

Angie created a green lettuce wrap with cilantro and chicken flavored with garlic, jalapeno, scallions, and lime. Topped with corn, avocado and a Greek yogurt with lime juice and pepper sauce. So flavorful and delicious it made us want to eat it outside in sunshine and 80 degree weather...even though she had to grill the chicken at 11pm with a headlamp on outside in the dark!

Tanya created a hearty pea soup. Using ham chunks, celery, scallions, garlic, carrots and peas we were comforted while eating this tasty warm soup!

Michelle created a Israeli Couscous from Trader Joe's and broccoli side dish with Tarragon Olive Oil, crushed red pepper, and peanuts topped with avocado and Balsamic Bellavitano Cheese (like a fresh Parmesan cheese with a twang).






Next week we are celebrating Breast Cancer Awareness and therefore we are going to make a PINK Dish!

Color Day: All white food

Color Day: All white food

A new school year started and therefore we reestablished our fun lunch days!!!
Last we we thought about what we have already created and decided that it should be food based on a color. What color.....well we looked in the hallway and said the color top of the next person that walks by. 

Task: create food only using white ingredients for lunch on Sept. 20th, 2012

Angie created a white bean hummus with homemade pita chips flavored with oregano. So flavorful and delicious!

Tanya created an oven baked potato with Gruyere cheese and cheddar cheese melted on top. So gooey and yummy!

Michelle created a crockpot chicken, cheese, bean and corn dip with sour cream and white corn chips. Tasty enough for a dinner!

The color day was so fun and successful we decided to stick with it and choose GREEN for the next fun time!

It all started out when Tanya said I have brie and I need to use it so can I bring it in for lunch and we all share it. We said sure and lets all bring something to share.



French day - Brie, grapes, veggies, and cookie

The next week I saw a groupon for an Italian restaurant in the downtown where we work so I said I'd get it and called to see if they could deliver to our building. Yes on the delivery but no on using the groupon for a take out. So we decided to all make something Italian.

Italian day -lasagna, cannoli, mozzerella caprese

We decided to do a Mexican day the next week.

Mexican day - green tomatoes filled with stuff, salad with corn and black beans, enchiladas

We knew we would miss two weeks so the next time was easy since it was the week of cinco di mayo.

Uno di Mayo day - Munster cheese dip, guacamole, and salsa

Next, we decided to do a tapas day......oh we were all excited for this one!

Tapas day -  feta and tom. filled cucumber, meat and cheese on crustini, bread with ricotta, honey, almonds, bread with avocado, goat cheese, tomatoes, basil

I watched Top Chef and was inspired by it so asked if we could name two foods and then each of us would create a dish with those two ingredients. We asked two people to name a food. And they came up with apples and chicken.

Apples and chicken day - chicken salad, chicken salad sandwiches on croissant, chicken soft tacos with lime honey sauce 

That worked out so well that we decided to do it again. We asked two other people and they said strawberries and celery.

Strawberries and celery day - spinach salad with strawberries and celery, strawberry salad puree fluff,  double dark chocolate brownies with diced celery in a pie crust and topped with strawberry puree

At this point the show that I am consumed with is Top Chef. I love the show and it makes me really try and change the food items into something different and not just use them. We asked two other people for the next week and we got peanuts and pasta. 

Peanuts and pasta day - Quinoa pasta with tomatoes and a pesto sauce on top made with peanuts, Pad Thai, veggie stir fry over pasta with a hot peanut sauce.

Now were are really getting into this fun! We are so excited for each special lunch day once a week and have multiple conversations throughout the week about it. We never reveal what we are making until the moment we sit down to eat. 

 Lettuce and lemons day - lettuce wraps with seaweed, pine nuts, tomatoes, lemon cashew garlic sauce,  A smoothy with lemon, kale, bananas, apples, avocado, and a sandwich with bacon, lettuce, tomato, avocado, and a lemon honey rosemary goat cheese spread

Our last fun lunch for the season was determined to be bananas and cinnamon. I decided I would not make a dessert. As soon as those were the two items mentioned I thought dessert. So I worked harder than ever to come up with a main course for these items. 

Bananas and cinnamon day - banana boat with marshmallows, chocolate, and cinnamon inside warmed to gooey, banana soup with cinnamon croutons, and Cincinnati chili with extra cinnamon with a basil corn meal banana and cheese fritter  

We have now taken a break for the summer but have great plans of continuing this fun lunch with friends.

The first 8 lunch fun lunch shares

It all started out when a friend said, "I have brie and I need to use it. I'm bringing it in to share at lunch." We said sure and all decided to bring something to share. And now we have turned our once a week lunch share into a Top Chef challenge!
