Tropical Day

As we planned out our next fun lunch a few weeks ago we assumed that Dec. 7th would be a cold snowy day in Michigan and that having a tropical theme would "warm it up". But turns out we were wrong. No snow yet but sure was nice to eat sweet tropical dishes.

Coconut Mango Chicken

Pineapple Crockpot Chicken: Warm and moist chicken slow cooked in the crock pot with Caribbean jerk marinade, bbq sauce, and pineapple. Served with rice cooked in pineapple juice. 

Coconut Mango Chicken: chicken cooked with lime and coconut oil with kale added in placed on top of quinoa all  topped with a tropical mango chutney made with cilantro, mango, and avocado. Recipe

Tropical Shrimp Couscous: A tasty fruity mix of papaya, mango, and pineapple tossed with shrimp, couscous and cilantro.
