Angie created a green lettuce wrap with cilantro and chicken flavored with garlic, jalapeno, scallions, and lime. Topped with corn, avocado and a Greek yogurt with lime juice and pepper sauce. So flavorful and delicious it made us want to eat it outside in sunshine and 80 degree weather...even though she had to grill the chicken at 11pm with a headlamp on outside in the dark!
Tanya created a hearty pea soup. Using ham chunks, celery, scallions, garlic, carrots and peas we were comforted while eating this tasty warm soup!
Michelle created a Israeli Couscous from Trader Joe's and broccoli side dish with Tarragon Olive Oil, crushed red pepper, and peanuts topped with avocado and Balsamic Bellavitano Cheese (like a fresh Parmesan cheese with a twang).
Next week we are celebrating Breast Cancer Awareness and therefore we are going to make a PINK Dish!
